Gluten Free Oreos

Happy Valentine’s day my lovely people. This year all of my roommates are all single together and we couldn’t be happier because the Nabisco Gluten Free Oreos have made it to Minnesota stores just in time for the holiday. Thankfully we are also all of the generation that has Lindsay Lohan’s genius to thank for dipping Oreos in peanut butter. I had not had a Nabisco Oreo in probably 10 years. Once I heard that they were coming out with gluten free Oreos I could barely contain myself. The first time I had them was about a week ago when my incredible roommate saw them at Target and bought a pack for me to try. When she got home I was ecstatic and will admit to jumping up and down and squealing a little. They were delicious and tasted exactly as I remember Oreos to taste. I have needless, to say been a repeat customer. We must not forget the other OG sandwich cookie brands that got us through, these include: Mi-Del Sandwich cookies, KinniToos sandwich cookies by Kinnikinnick, or Glutino sandwich cookies. To them I say thank you for allowing the gluten free community to embrace our favorite sandwich cookie recipes before Nabisco could create their iconic Oreos gluten free. Schär Gluten Free Table Crackers

Good afternoon Everybody; I hope this post finds you well. As we continue on in the Holiday season I find myself reminiscing about holidays prior to the pandemic. In a normal year my grandparents would typically be arriving within the up and coming days and staying through the new year. When company comes to visit cheese and crackers are a must. No matter the occasion, a homemade charcuterie board is front and center on our table prior to the main meal. Our go to crackers are typically Blue Diamond Nut-Thins or Crunchmaster Multi-Seed crackers, but this year we found a new cracker that will be added to our cheese and cracker platter: Schär Gluten Free Table Crackers. Despite it being just the four of us for the holidays this year I have no doubt the cheese and cracker tradition will live on. I first tried the Schär Table Cracker when I went home for Thanksgiving. It was very light, buttery, had a good crunch, and reminded me of an original Club cracker. I especially enjoyed it paired with a cranberry goat cheese or Drunken Goat cheese. Writing this piece I smile thinking about my favorite holiday memories and I am so grateful for all of those wonderful moments of togetherness. As for this year we must embrace that which we have and remain grateful. I hope you all can enjoy your favorite holiday meals and traditions this season. Gluten Free Kraft Mac n’ Cheese! 🧀

That’s right folks I said it! Kraft has officially made a gluten free mac n’ cheese! I knew that it existed from differing social media accounts, but I had yet to discover it in Minnesota. A week ago today I found some in a local Target. Ask my roommates to verify, but I got very very excited. Before going gluten free I loved mac n’ cheese-it was the lunch of my childhood. Since being gluten free I have been searching non-stop for a righteous replacement to my youth favorite food. I think that Kraft did a great job of replicating the flavors from their regular mac n’ cheese to their new gluten free mac. I must say that since being gluten free I have come to love Amy’s Deluxe Rich and Creamy mac n’ cheese as well. I found that at a local Target for the first time this summer and immediately fell in love. It reminded me of my all time pre-celiac favorite mac n’ cheese: Velveeta Squeeze Cheese mac n’ cheese. I am so happy with all of the new gluten free mac n’ cheese options. I can’t wait to see what new options come out soon. From my kitchen to yours stay safe and eat well.

Favorite Gluten Free Oats

As I have mentioned so many times before gluten can hide in tricky places. One of the most common hiding places for gluten is within oats and oatmeal. Oats are one of my favorite breakfasts, but they’re also an essential ingredient within crisp/crumble toppings. It can be tiresome to not only find a gluten free oatmeal, but also find a gluten free oatmeal you like. My favorite gluten free oatmeal is Bob’s Red Mill Gluten Free Old Fashioned Oats. It is easy to make and bakes really well into anything. It can be found at a variety of stores and supermarkets such as Target, Cub, and even Amazon. Gluten Free Graham Crackers

It’s finally s’mores season! I love s’mores, I mean who doesn’t. I remember when Brooke was first diagnosed with Celiac, and that meant that s’mores were missing a key element, the graham cracker. Don’t get me wrong here if you served me toasted marshmallows melting in between two pieces of chocolate, I wouldn’t complain. However, that gets very messy, so cue in “S’moreables” by Kinnikinnick. These gluten free graham crackers are our family’s favorite gluten free graham cracker brand. They taste amazing and have a solid crunch. We use these graham crackers for everything from s’mores to pie crusts. Another bonus, they can be found at most grocery stores. Next time you make s’mores don’t forget the gluten free graham crackers, use “S’moreables” by Kinnikinnick. Otherwise, two halves of a Hershey bar work great too- I’m not one to judge. Protein Pancakes

I tried something new today! Lately I have been making more of an effort to eat well and eat clean for smaller meals, such as breakfast or lunch. Usually I just have a breakfast protein shake, but for some reason I was really craving pancakes this morning. Don’t be alarmed I have had pancakes before, that is not the ‘new thing’ I tried today. I found some new pancake mix for gluten free protein pancakes, that my Dad found at the store. I was pleasantly surprised by this new mix so I wanted to give them a shoutout and tell you guys all about them.

Here are the numbers for two 1/3 cup sized pancakes (a serving) they are 160 calories, 5 grams net carbs, and 9 grams of protein. They are Keto, grain free, gluten free, and have no added sugar. Now based on my last posts y’all know I am a huge foodie and am not on some Keto diet, but I wanted to give these a try for something different. Birch Benders Micro-Pancakery makes this mix, and all you have to do is add water. Personally I really enjoyed these, I thought it was fun to mix it up and still have a healthy pancake option. They were filling and they tasted really good. I would definitely have these again, and recommend them to anyone looking for a healthier take on this yummy breakfast treat.

Favorite Cake Mixes

Most of our family birthdays occur in the spring, so I thought it fitting to post about our favorite cake mixes. There will be more information on our favorite individual cakes coming to the “Favorite Recipes and Dishes” category very soon. In our family I am notorious for a having a sweet tooth, so talking about cakes is right up my ally. If you saw my “Easter Eats” post you know that Brooke loves making angel food cakes. Her favorite box mix to use in the Kinnikinnick brand. It is an easy mix and tastes great. For regular chocolate and vanilla cake mixes our must have brand is: Betty Crocker’s Gluten Free Cake Mix. It requires minimal ingredients, it’s moist, it’s rich, and it tastes amazing. It is a great cake base that can be dressed up or down no matter the occasion. Think of this mix like your favorite basic t-shirt, versatile. When it comes to baking cakes many of our staple recipes can be found in “The Cake Mix Doctor Bakes Gluten Free” written by Anne Byrn. This cook book offers a wide variety of delicious gluten free cakes and treats. For anyone in the market for a new dessert cookbook I would 11/10 recommend this gem.

Favorite Gluten Free Flours

It’s easy to dream about flowers right now as it is April 13th, but snow is covering the ground. That said, I will be writing about our family’s favorite gluten free flours today;) instead. I have found that baking with gluten free flour can at times feel like a science experiment. It’s not easy to get the right consistency or moisture within a gluten free dough/batter without some alterations of a recipe; whether that be adding an extra egg, some more water, or even apple sauce. However, having the right flour makes all of the difference. Below you will find my favorite flours to cook and bake with.

Bette’s Gourmet Featherlight Rice Flour Blend: This flour is a must in our kitchen. It incorporates very well into recipes and requires minimal moisture additions. A quick tip to baking with gluten free dough is to let the dough chill in the fridge for 20-30 minutes prior to shaping and baking it. This allows for the flour to soak up more of the dough’s moisture. We use this flour in everything from crusts and breads to pancakes and even homemade pasta. Another great aspect of the flour is that you can order it on Amazon.

Another flour we love to keep around our home is pink peonies. Oops, just kidding, I have spring flowers on the brain again.

In all seriousness another flour we almost always have in the pantry is: King Arthur Gluten Free All-Purpose Flour. It’s another amazing flour for cooking and baking and can be found in almost any grocery store. It incorporates very well into diverse recipes and is lightweight. It can get a little dry, so small amount of additional moisture to a batter or dough doesn’t hurt.

Top 3 favorite Bread Brands

Udi’s- A great loaf of bread for sandwiches, and is also conveniently found in most grocery stores. The taste is good, just be warned it does crumble easily. Udi’s has many other gluten free food products. I remember Udi’s as one of the first gluten free brands utilized in our home after Brooke was diagnosed in 2009.

Against the Grain- This is our family’s favorite gluten free baguette and bun brand. It tastes great and holds together very well. It originated in Vermont, which is a very special state in the heart of our family because Dave (father) was born and raised in St. Albans.

Schär- Schär is another great brand for gluten free products. Their baguette is exceptionally good, and is a very close second to Against the Grain at our dinner table. It is also dairy free, for my gluten free foodies out there who cannot have dairy.
